What Is a Smash Burger?

A smash burger is made by pressing a fresh beef ball hard against a screaming-hot flat-top grill. The result is a thin patty with a deeply caramelized, lace-edged crust — the product of the Maillard reaction, where proteins and sugars react at high heat to create hundreds of new flavor compounds.

The technique is why smash burgers taste different from regular thick patties. You can't recreate that crust with frozen beef or in an oven. It takes fresh beef and direct contact with a very hot surface.
